Stage 01

Storage and dosing of dry components

Initial stage of quality control and process automation, ensuring receipt, storage and precise dosing of the components that enter the recipe.

Stage 04

Conching: the final refinement of flavor

Conching is the final refining stage, in which the mass is continuously agitated and sheared for 4 to 72 hours, between 45°C and 80°C. Three simultaneous phenomena occur: reduction of moisture and volatile acids residual from fermentation, coating of solid particles with cocoa butter, and final aroma development. The result is sensory texture, controlled viscosity for molding or coating, and aromatic stability throughout shelf life. The type of conche and its cycle time directly impact production capacity and energy cost per ton, making this a critical stage in the investment decision.
